Hello folks!
I hope I find you all well! Today I made this amazing shortbread…this one is very decedent, because we’re using clotted cream! YUM :) Rich, satisfying and just perfect with a cup of tea or coffee.
Everything I used will be listed below,

What I used
(an 8x8 or 9x9 inch square baking tin, lined)
310g (10.9 oz) Plain (all purpose) Flour
60g (2.1 oz) Very fine oatmeal, or oat flour
40g (1.4 oz) Cornflour, or cornstarch
100g (3.5 oz) White sugar, I used caster sugar…but ordinary white granulated sugar will do
170g (6 oz) Clotted cream
60g (2.1 oz) Unsalted butter
A couple of extra tablespoons of white sugar for the top
